Marinades also double as simple sauces and can turn everyday meat and potatoes (or pasta, or rice!) into something special. The best part? They’re so easy! A few pantry ingredients, a zip-top bag, and a little time are all it takes for gourmet-level meals your friends and family will rave about.
Why I Love Marinades (And You Will Too!)
Marinated meats can be grilled, baked, slow cooked, Instant Pot’d, or air fried. They even make great kabobs. And guess what? Veggies like mushrooms, onions, and pepper strips can marinate right alongside the meat for even more flavor-packed fun. (Just toss them into a grill basket if you’re firing up the grill.)
Staples to Keep in Your Pantry
These ingredients mix and match into nearly endless combos:
- Italian & Ranch Dressing (mix or bottled)
- Red Wine, Balsamic & Apple Cider Vinegar
- Lemon Juice
- Frank’s Red-Hot Sauce™ (or your fave)
- Taco & Pesto Seasoning Mixes
- Minced dried garlic & onion
- Half n’ Half
- Parmesan
- Plain Greek Yogurt

How I Do It
I like to mix marinades right in a 1-gallon Ziploc™ bag (inside a bowl, just in case!). I zip it up, shake gently, give it a sniff, and adjust as needed. Once I’m happy with it, I add the meat and veggies. Marinate 8–24 hours, flipping the bag a couple of times. It’s fun—like a flavor massage!

1. Chick n’ It Marinade
Just chicken + Italian dressing (I like the fat-free version!). Grill it, bake it, slow cook it—it always gets rave reviews. Name credit goes to my niece/friend Kelly!
2. Creamy Italian Marinade
Take Chick n’ It up a notch with:
- A splash of half n’ half
- A sprinkle of parmesan Perfect for baked or slow cooker chicken.
3. Balsamic Onion Garlic Marinade
My current fave! Mix together:
- Balsamic vinegar
- Olive oil
- Dried minced onion
- Parmesan
I use it with chicken chunks, frozen meatballs, and pepper strips—baked at 375°F for 55 minutes and served over rice.
4. Parmesan Garlic/Onion Marinade
Creamy and versatile! Mix:
- Half n’ half
- Olive oil
- Apple cider vinegar
- Parmesan
- Minced onion & garlic
- Black pepper
Also great as a sauce for pasta, potatoes, or quinoa (just make sure it’s fully cooked!).
5. Mexicali Marinade
Perfect for taco night or spooned over rice. Mix:
- Taco seasoning
- Olive oil
- Ranch dressing
- Optional: diced tomatoes or chilis
6. Out on the Ranch Marinade
Cool and creamy with a fresh finish. Mix:
- Half n’ half
- Plain Greek yogurt
- Ranch dressing
- Garlic powder
- Optional: minced onions
7. Pesto Marinade
Basil = summer in a bite! Mix:
- Pesto mix
- Half n’ half
- Greek yogurt
- Garlic powder
- Optional: Parmesan
Try it with shrimp or scallops—amazing!
