Father’s Day Stout Coffee Beer Float with Smoky Bacon Brittle Recipe: Can you handle all this flavor?
This ain’t your grandma’s ice cream float! This dessert packs a punch with strong coffee flavors and dark beer, perfect for dads who appreciate bold tastes. The smoky bacon brittle adds a salty crunch and a hint of campfire smokiness, making it a truly unique and satisfying treat. It’s the perfect way to end a Father’s Day filled with grilling and good company.
Ingredients:
For the Coffee Ice Cream:
- 2 cups strong brewed coffee, cooled
- 1 cup heavy cream
- 1 cup whole milk
- 1 cup sugar
- 6 large egg yolks
- 1/2 teaspoon vanilla extract
OR:
Substitute your favorite coffee ice cream
For the Smoky Bacon Brittle:
- 6 slices thick-cut bacon
- 1/2 cup packed light brown sugar
- 1/4 teaspoon smoked paprika
- Pinch of cayenne pepper (optional)
For the Stout Float:
- Cold Stout Beer (optional) root beer or cola can be substituted
- Whipped cream (optional)
- Coffee beans and more bacon brittle for garnish. Use chocolate covered coffee beans for even more flavor.
Instructions:
- Make the Coffee Ice Cream:
- In a saucepan, combine coffee, cream, milk, and sugar. Heat over medium heat until sugar dissolves, stirring occasionally. Do not boil.
- In a large bowl, whisk together egg yolks. Slowly whisk in hot coffee mixture until well combined. This has to be done extremely slowly or the eggs can cook. You’ll have coffee flavored scrambled eggs. Hey, that might be good!
- Return mixture to the saucepan and cook over medium heat, stirring constantly, until mixture thickens and coats the back of a spoon (around 175°F).
- Strain mixture into a bowl and stir in vanilla extract. Let cool completely, then freeze for at least 4 hours or overnight.
- Make the Smoky Bacon Brittle:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Arrange bacon slices on the prepared baking sheet in a single layer. Bake for 15-20 minutes, or until bacon is crisp but not burnt.
- While the bacon is baking, whisk together brown sugar, smoked paprika, and cayenne pepper (if using) in a small bowl.
- Once bacon is cooked, remove from oven and carefully brush the tops with the brown sugar mixture.
- Return bacon to the oven and bake for an additional 5 minutes, or until sugar is melted and bubbly.
- Let bacon cool completely on the baking sheet. Once cool, break the bacon into large pieces.
- Assemble the Float:
- In a tall glass, scoop in a generous amount of coffee ice cream.
- Top with beer or soda.
- Add a generous amount of smoky bacon brittle pieces.
- Finish with a dollop of whipped cream (optional) and a sprinkle of coffee beans for garnish.
- Garnish even further with more bacon brittle.
Serve this float immediately after assembly. The smoky bacon brittle will soften slightly over time, adding a textural contrast to the creamy ice cream.
