The Easter (Spring) Bunny is about to hop around the corner. What better way to celebrate than with homemade versions of your favorite candies? Forget the store-bought stuff! This year, impress your family and friends with these delicious copycat recipes! I think these 2 candies are the perfect Easter treat. I have only known a couple of people that don’t like PB and chocolate. And, who can’t resist a Cadbury Egg? Not me!
I didn’t put a quantity on either of these recipes. You can make them as big or little as you like. And both are gluten-free!
Cadbury Creme Eggs: The Ultimate Easter Indulgence
Let’s start with a classic. These gooey, chocolatey delights are an Easter staple.
For The Fondant (ooey gooey filling):
- 2 cups powdered sugar
- 3 tbsp corn syrup (see note at bottom)
- 2 tbsp softened butter
- 1 tsp vanilla extract
- Yellow food coloring
For The Coating:
- 12 oz milk or semi-sweet chocolate chips, melted
- 1 teaspoon coconut oil or Crisco shortening
Instructions:
- Combine powdered sugar, corn syrup, butter, and vanilla. Mix until smooth.
- Divide the fondant into two portions. Color 1/3 yellow (the “yolk”). Leave the rest white.
- Shape the white fondant into oval shapes, then press a small ball of yellow fondant into the center of each. Wrap the white around it and gently form into an egg shape.
- Chill the eggs in the freezer for 30 minutes. Make sure they aren’t touching each other.
- Melt the chocolate chips and Crisco in the microwave on high for 30 second intervals. Stir after each time.
- Dip each egg in the melted chocolate quickly. You don’t want the eggs to melt and the chocolate to get cold.
- Set them down gently on parchment-lined baking sheets and let them set up.
- It’s almost impossible to keep these eggs from having a flat bottom. That’s ok, they want roll away!
Reese’s Peanut Butter Eggs: A Peanut Butter Lover’s Dream
Who can’t resist the perfect combination of peanut butter and chocolate? For over 100 years now, it’s the most popular candy flavor combo!
For The Filling:
- 1 cup peanut butter
- 1 1/2 cups powdered sugar
- 1/4 cup softened butter
- 1 tsp vanilla extract
For The Coating:
- 12 oz milk or semi-sweet chocolate chips, melted
- 1 teaspoon coconut oil or Crisco shortening
Instructions:
- Mix peanut butter, powdered sugar, butter, and vanilla until well combined.
- Shape the mixture into egg shapes.
- Chill the eggs in the freezer for 30 minutes. Make sure they aren’t touching each other.
- Melt the chocolate chips and Crisco in the microwave on high for 30 second intervals. Stir after each time.
- Dip each egg in the melted chocolate quickly. You don’t want the eggs to melt and the chocolate to get cold.
- Set them down gently on parchment-lined baking sheets and let them set up.

Tips for Success:
- Use high-quality chocolate for the best taste.
- Be patient with shaping and dipping.
- Lay the eggs on a fork to carefully dip them into the melted chocolate.
- You can create designs on the chocolate coating with a toothpick or use a squeezable decorator bottle.
- Gel food coloring (for icing and the like) provides vibrant colors.
- You can use Easter or Spring colored cupcake or mini muffin papers to cradle each egg.
NOTE: Corn Syrup
Corn syrup has been getting a bad rap lately, but it’s still a popular ingredient in many foods. Some people believe that corn syrup is unhealthy because it is high in fructose, a type of sugar that can be harmful to your health. However, others believe that corn syrup is perfectly safe in moderation.
So, what’s the verdict? Is corn syrup bad for you?
Yes, it is all carbs. The really bad carbs. As “simple” and “processed” as you can get. We all know that simple carbs raise blood sugar levels. They cause all sorts of problems. But there is that term again, “in moderation”. Corn syrup does add to a recipe. It is a great thickener and binder. I’m working on a recipe for a corn syrup substitute. I need to experiment more before setting it loose on the world. There will be zero corn in it, but it will still be sugar. Again, “in moderation.”.
As in this recipe I try my best to not include corn syrup or to include very small amounts of it.
If you’re looking for a special treat on Easter, go ahead and enjoy a Homemade Cadbury Creme Egg or two. After all, it’s only once a year.
Here are some other tips for enjoying Easter without going overboard:
- Choose dark chocolate over milk chocolate. Dark chocolate is lower in sugar and calories than milk chocolate. Dark chocolate is rich in minerals and can reduce inflammation and is good for the heart.
- Eat your candy in moderation. Don’t overdo it! Unless someone else eats, it will be there tomorrow. In the words of the amazing expert on Intermittent Fasting Gin Stephens, “Delay, don’t deny!” Pace yourself.
- Balance your treats with healthy foods. Eat plenty of fruits, vegetables, and whole grains.
- Get some exercise. This will help you burn off any extra calories you consume.
- Drink plenty of water. Water helps to make us feel full and it can actually help lift your mood.
