Easy Slow Cooker Spaghetti & Meatballs/Sausage: just like Ma used to make

My mother simmered her legendary spaghetti and meatballs (and sometimes sausage) in a big yellow enameled Dutch oven. It bubbled away on the stovetop all day. The house smelled delicious, like comfort wrapped in tomato sauce and garlic. But let’s be honest: keeping an eye on that pot wasn’t easy. It sputtered and spat like it had opinions, and if you dared to lift the lid, you risked a sauce-speckled splash zone. Plus, it cooked down too quickly and needed water added… which only thinned the flavor. And forget about leaving the house while it was simmering. Um, not me!

So, I adapted Ma’s recipe for the slow cooker. Why? Because slow cookers are kind, steady, and oh-so-forgiving. They cook low and slow, keeping every ounce of flavor and nutrition inside the pot – and off your stove, your walls, and your outfit. Liquids stay put, nutrients don’t vanish, and the flavor deepens quietly while you go about your day.

You won’t find exact measurements here because this recipe dances to your rhythm. Whether your slow cooker’s a cozy 3-quart or a generous 10-quart, it’ll work. I typically use my 4 or 6-quart. One of the many things I adore (and believe me, there are MANY) about slow cookers is their versatility. Building a meal in one is like painting or crafting. Just add what you love and let it gently transform into a masterpiece.

For The Sauce:

(4 to 6 Quart Slow Cooker)

Ingredients:

  • 2 jars of your favorite sauce (could be less, could be more)
  • 1 large can (28 oz.) stewed whole tomatoes cut into small pieces, keep the liquid for another recipe (Bloody Mary’s, anyone?)
  • ¼  cup dried minced or ½ fresh coarsely chopped onion
  • ½ cup bell peppers coarsely chopped, any color
  • Canned or fresh mushrooms if desired, sliced or chunks
  • Garlic powder to taste
  • Italian seasoning to taste
  • 1 or 2 large bay leaf (this is what makes my sauce taste like my mother’s)
  • A little parmesan cheese if desired

Instructions:

  1. In a slow cooker combine all ingredients.
  2. Set the slow cooker to Low.
  3. Cook for a total of 6 to 7 hours.
  4. Remember to leave enough room for the meat.
  5. To make a Rose Sauce just mix equal parts of spaghetti sauce and alfredo Sauce. I will post my recipe for Janny Bee’s Decadent Alfredo Sauce in a later post. It’s to die for, if I don’t say so myself!    

For The Meatballs/Sausage:

Depending on what you’re adding to the sauce, here’s how to time it just right:

Meatballs

  • Frozen meatballs: Stir into the sauce 5 hours before dinnertime.
  • Thawed meatballs: Stir in 4 hours before.

Sausage

  • Fresh (uncooked) sausage: Brown in a frying pan first to bring out the flavor, then add to the sauce 5 hours before dinnertime.
  • Fully cooked sausage: No need to brown – just stir them into the sauce 4 hours before dinner.

Make sure sausage pieces are fully covered by the sauce while they cook – it helps them soak up all that delicious flavor.

Sausages can be stood on end in the slow cooker.

Is your sausage fresh or cooked? Check the packaging – it usually tells you. But here’s a quick trick:

  • If it feels hard, it’s likely fully cooked.
  • If it feels soft and slightly limp, it’s probably fresh, and needs longer cooking for safety.

For The Pasta:

Oh, the choices! So many choices!

Most folks say to pick a pasta that holds sauce well like rotini, penne, or fusilli. But I say, pick the one you love. After all, spaghetti doesn’t hold sauce all that well… and we eat it anyway, don’t we?

Personally, I like cooking my pasta in the morning. I drain and rinse it, then store it in a microwavable container. Just before dinner, I nuke it for a couple minutes and it tastes freshly made.

If you’re not into the microwave method, you can place it in a colander and run very hot water over it – just like they do in restaurants. Did you know that? Yup, that’s how they do it!

Of course, you can always boil it fresh right before dinner. I just prefer my method – it helps when there’s a million other things going on at the same time. Families have a way of doing that to you! 😊

For The Sides:

A simple salad, whether made from scratch or store bought, adds a fresh touch to your meal.

Need quick garlic bread in a pinch? Grab sliced bread or rolls, cut in half, add pats of butter, sprinkle on garlic powder, and toast it in the toaster oven. Once done, spread the topping evenly – and don’t be shy with a little parmesan if the mood strikes. Your family and friends will think it took way longer than it did!

I love buffet-style dinners. I set everything out on the kitchen peninsula and let everyone help themselves. Of course, little ones need a hand. And the big ones? Sometimes they need a nudge to take the veggies. 😉
