Magic Cake: The best little cake EVER!

This little magic cake is irresistibly moist and delicious—it really is magic! The secret? A bit of the icing is mixed right into the batter, giving the cake its rich texture and signature flavor. I love that it’s frosted right in the baking dish, making it easy to decorate in countless ways.

Cut it into squares or rectangles and dress it up however you like. Because it’s laid out in a grid, every piece gets its own special topping! Holidays and special occasions are a perfect excuse to get creative. My favorite: a little “nest” of green-colored coconut topped with three jellybeans—adorable for Easter or springtime.

The recipe can also be doubled and baked in a 9×13-inch dish, but keep in mind that it’s a delicate cake, best enjoyed in small, magical bites.

Serves 9 to 12 when using a 8×8 or a 9×9-inch baking dish

ICING or FROSTING (if you must)

  • 3 oz cream cheese, softened.
  • 1 stick butter, softened (½ cup)
  • 3 ¾ cups powdered sugar.
  • ½ cup milk

CAKE

  • 2 eggs
  • 1 t vanilla
  • 1 ¼ cup flour
  • ½ t baking powder
  • ¼ t salt
  • 1/3 cup water

Make the icing first:

  1. Beat cream cheese and butter on medium speed until smooth.
  2. Add sugar and milk alternately.
  3. Beat until well blended and smooth.
  4. Remove 1 cup of icing and set aside to add to the batter.

Prepare the cake:

  1. Preheat oven to 350°F (180°C)
  2. Grease and flour an 8×8 or 9c9 inch baking dish.
  3. On low speed, mix eggs with the reserved icing.
  4. In a small bowl combine flour, baking powder, and salt.
  5. Add flour mixture to mixing bowl alternately with water and continue beating 1 to 2 minutes or until well blended.
  6. Pour into prepared baking dish.
  7. Bake 30 – 40 minutes or until a toothpick or cake tester comes out clean.
  8. Cool on a wire rack.
  9. Frost right in the dish with the remaining icing when the cake is completely cool.
  10. Decorate any way you like! Be creative!
