Overnight Banana Bread Oats: easy, delicious, nutritious
When we were all in lockdown it seems like everyone was addicted to Banana Bread. This breakfast combines the comforting flavors of banana bread with the convenience of overnight oats. It requires minimal effort, and because you prepare it the night before, it is a time-saving option for busy mornings.
Experiment with additional mix-ins such as raisins, shredded coconut, or a sprinkle of cocoa powder to customize the flavor profile to your liking. It’s a delicious and nutritious breakfast that will keep you satisfied and energized throughout the day. It’s also great to pack in your or your kid’s lunch bag. Just because it’s called a “breakfast” dish it can be really good for lunch as well.
- 1 ripe banana, mashed
- 1/2 cup rolled oats
- 1/2 cup milk (dairy or plant-based)
- 1 tablespoon chia or flaxseeds
- 1 tablespoon honey or maple syrup (optional)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- Optional toppings: sliced bananas, chopped nuts, a drizzle of melted nut butter
- In a jar or container with a tight-fitting lid, combine the mashed banana, rolled oats, milk, chia/flax seeds, honey/maple syrup (if desired), vanilla extract, and cinnamon. Mix well until all the ingredients are thoroughly combined.
- Cover the jar and refrigerate overnight or for at least 4 hours to allow the oats to soften and absorb the flavors.
- In the morning, give the oats a good stir. If the mixture appears too thick, add a splash of milk to reach your desired consistency.
- Top banana bread overnight oats with sliced bananas, chopped nuts, and a drizzle of melted nut butter for added texture and flavor. (if desired)
This recipe is very versatile and can be switched up in so many ways. Have fun experimenting with it! Make a different flavor for each member of the family. This would be great to take along in the for those early morning vacation car trips. Much healthier than the drive-thru.
NOTES:
- Make it Gluten Free by choosing GF Certified oats.
- You can use yogurt instead of the milk. Be aware that you may have to thin it down with milk to get a creamy texture.
- This can be vegan if you choose a dairy free milk or yogurt.
