Easy Greek Pasta Salad Recipe: just like in the diner
Have you ever been to a Greek diner? That is practically an oxymoron. Please do not take this the wrong way. I love Greece and Greek people but, in the U.S.A most diners are owned by Greek people. So, if you have been to a diner, there is a good chance you have been to a Greek diner. Why? I guess they just have a knack for it and are the best at it. I’m certainly not going to argue!
Here is an amazing Greek pasta salad that could definitely be found in a Greek diner.
- 8 ounces of rotini pasta
- 1 cup grape tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup Kalamata olives, pitted and halved, quartered if large
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped, or 4 teaspoons dried
- 2 tablespoons lemon juice
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Cook the rotini pasta according to the package instructions. Drain and rinse with cold water.
Combine the cooked pasta, grape tomatoes, cucumber, Kalamata olives, feta cheese, red onion, and parsley in a large bowl.
Whisk together the lemon juice, olive oil, dried oregano, salt, and pepper in a small bowl.
Pour the dressing over the pasta salad and toss gently to combine.
Refrigerate for at least 1 hour before serving to enhance the flavors.
NOTES:
- Use any pasta you like, even tortellini/
- You can add anchovies for a definite Greek touch.
- If using dried parsley, soak it in the lemon juice/olive oil mixture for 15 minutes to reconstitute.
- Make it gluten free by using GF pasta.
- Make this easy Greek salad into a meal by adding grilled chicken, pork, fish, beef or tofu.
