Extremely Easy Pierogies and Chicken Dinner: Hubby to the rescue!
Dinner Made On a Whim!
Do you ever have those days where nothing is really planned for dinner and that’s a good thing, because things get crazy and before you know it it’s dinnertime? Well, that happened at my house yesterday! I was thinking of finding some leftovers or something from the freezer. My husband Tom wanted something more substantial. We talked about ordering Chinese or getting subs, but then out of the blue he came up with this. I can’t really tell you the recipe, just what was in it and how we did it. Hmm… I guess that’s what a recipe is, huh?
He thought about what we had in the freezer and pantry and came up with this amazing and extremally easy dinner. I wasn’t even thinking about posting it, but after I tested it I just had to share. I asked our daughter take a picture of her plate after she had already eaten some. The bread is a rosemary baguette with melted butter and garlic. It all was really delicious! Tom is so good at making something great from nothing!

Ingredients:
- Frozen pierogies (I think about 5 cups)
- Jarred spaghetti sauce (32oz)
- Frozen peppers and onions (probably 1 cup)
- Frozen battered chicken nuggets (4 cups or so)
How it was put together:
Tom heated the spaghetti sauce and peppers/onions in a 3qt saucepan and then added the chicken nuggets. He heated it till it was hot and a little bubbly. I boiled the pierogies in a 5qt pot. I drained them and then he added the sauce, pepper/onion, and chicken mixture in with the pierogies. Mixed it all up and, voila! A healthy, delicious and extremally easy dinner! It was really really good. Comfort food, for sure! I think this is a keeper!
Pierogies can be used in so many ways:
- As a side dish. Boil as usual drain and add olive oil and your favorite seasonings.
- In a casserole instead of pasta or rice.
- Some people like them fried after they are boiled. I’m not sure if I like them that way or not.
- I like them as a snack right out of the fridge. You know you love something if you eat it like that! I should add that they have been cooked and not frozen. 😊
