3 Restaurants, 3 Copycat Biscuit Recipes: Popeye’s, KFC, Red Lobster (Copycat Recipe Series – Part 1)

It’s still soup season, and what goes better with soup than a warm buttery biscuit? Biscuits are amazing all year long and versatile. Great with any meal. Breakfast, lunch, or dinner! Warm them in a microwave or toaster oven. Use as a topping for casseroles and old-fashioned pot pies. Spread thickly with butter, jam, peanut butter, and garlic butter. Top them with sausage gravy. However you like them, biscuits are incredible! Here are 3 of the world’s best. Or, at least I think so. These copycat recipes for Popeye’s, KFC, and Red Lobster are as good or better than the ones you get at the restaurants. And, the best part? Kids love them and will want to help you make them. Let’s get those kids in the kitchen as much as we can!

All of these recipes can be halved.

Popeye’s Biscuits

Popeye’s biscuits are the epitome of the southern biscuit. Make a batch of these for dinner or breakfast smothered with sausage gravy, pure heaven to me! This copycat recipe makes 12 to 15 biscuits.

  • 4 cups Bisquick Baking Mix
  • 4 ounce Sour Cream
  • 1 cup Club Soda (room temp and bubbly)
  • 1 stick Butter (1/2 cup)
  • Cooking Spray (optional)


1. Preheat oven to 375°F (190°C).

2. Mix Bisquick, sour cream, and club soda together.

3. Pour onto a floured surface and knead very lightly. You can use a little Bisquick for this.

4. Roll or pat out to about 1/2 inch thickness.

5. Cut with a round cutter or glass. About 2.5 inches.

6. Melt butter and pour half into a glass 9×13 inch baking dish.

7. Place biscuits in a single layer in the dish and pour the remaining butter over the top of the biscuits.

8. Bake for about 20−25 minutes or until golden brown.

NOTES:

  • If you want to use less butter, do not put butter in the bottom of the baking dish. Instead, use a few sprays of cooking spray on the bottom and pour a little of the melted butter over the top.
  • Make sure that the club soda still has a lot of fizz. Don’t use flat club soda. The bubbles help make these biscuits fluffy.
  • If the dough seems too thick, add a little more club soda. If the dough seems a little too thin, add a little more Bisquick.

KFC Buttermilk Biscuits

These biscuits have a very downhome country feel to them. Just like the Popeye’s biscuits they are cut into circles. This copycat biscuit recipe does not call for baking them in butter. They are baked on a baking sheet. This recipe makes about 18 biscuits.

  • 1 Stick Butter (1/2 cup)
  • 2 1/2 tablespoon Sugar
  • 1 egg, beaten
  • 3/4 cup Buttermilk
  • 1/4 cup Club Soda
  • 1 teaspoon Salt
  • 5 cups Bisquick Baking Mix

1. Preheat oven to 450°F  (232°C).

2. Combine all of the ingredients.

3. Knead the dough by hand until smooth.

4. Pat the dough flat to 3/4−inch thick.

5. On waxed paper or a floured surface cut out biscuits with a round cutter or glass. About 2.5 inches.

6. Bake for 12 minutes or until golden brown on a parchment-lined baking sheet. Biscuits can touch each other. This will make them rise higher.

NOTES:

  • Make sure that the club soda still has a lot of fizz. Don’t use flat club soda. The bubbles help make these biscuits fluffy.
  • If the dough seems too thick add a little more buttermilk. If the dough seems a little too thin add a little more Bisquick.

Red Lobster Cheddar Bay Biscuits

The Cheddar Bay Biscuit is undeniably the most famous restaurant biscuit of them all. The iconic cheesy garlic taste with the toasty peaks of goodness atop its free form shape. It’s a real masterpiece! Give this copycat recipe a try. Makes 12 biscuits.

Dough:

  • 3 3/4 cups Bisquick Baking Mix
  • 3 oz Shredded Cheddar Cheese (about 3/4 cups)
  • 1 1/3 cups cold Buttermilk or Whole Milk

Garlic Spread:

  • 1/2 cup melted Butter (1 stick)
  • 1 teaspoon Garlic Powder
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Onion Powder
  • 1/8 teaspoon Dried Parsley

1. Preheat oven to 375°F (190°C).

2. In a mixing bowl, combine the Bisquick and cheddar cheese.

3. Add the cold buttermilk and blend until just combined. Do not overmix. The dough will be somewhat soft.

4. Using a small scoop or spoon, place the dough about 2 inches apart on a baking pan or cookie sheet lined with parchment paper.

5. Bake for 10-12 minutes, or until golden brown.

6. While the biscuits are baking, combine the garlic spread ingredients.

7. When the biscuits are done brush them with the garlic spread.

8. Serve warm, but cold is great too!

NOTES:

  • After you brush the biscuits with the garlic spread you can pop them back into the oven for a minute or so to get re-crisped.
  • The recipe for the garlic spread can be used for toasted garlic bread. Add some parmesan for extra flavor.
  • If the dough seems too thick add a little more buttermilk. If the dough seems a little too thin add a little more Bisquick.
